Sunday afternoon was abosolutely gorgeous so Noah and I took advantage and went to check out some trails at a local park we hadn’t been to yet. We ended up at Meridian Riverfront Park in Okemos – about 30 minutes from where we live now. We walked on about 2 miles of trails which were a mix of open fields and wooded areas – very pretty!

For dinner we shared a delicious NY strip steak and had spinach salads. Delicious!
I mixed up some “homemade” trail mix to have on hand for snacks this week. Featuring: raw almonds, roasted peanuts, salted sunflower seeds, Honeycomb Sunflower Seeds from NatureBox, raisins, and dried cranberries. I had some today as my afternoon snack at work and it sure did hit the spot!
This morning when I woke up I looked outside to see this beautiful sunrise.
And then it rained all day…
We had sauteed asparagus and grilled garlic/onion polish sausage for dinner, but I also made this quinoa lasagna to have for lunches and dinners this week. I’ll let you know how it turns out and share the recipe if it’s good. My mom made this and I had some, but I used a different recipe (should be similar though) so we’ll see.
Yesterday I got the new RunnerBox that was a birthday gift from my brother, sister-in-law, and nieces. Once again it did not disappoint and there were many good things in the box that I can’t wait to try. More to come as I work my way through the goodies.
