A New Baking Adventure

Today at work was exhausting, so I was happy to go back to Zumba (after a long hiatus) afterwards.  I LOVE the music and just being able to have fun while working out! I don’t always get all the moves right, but I figure as long as I’m moving that’s all that matters 🙂

I had more randomness for dinner tonight – somewhat similar to last night’s dinner, but this time instead of turkey/pepperoni/cheese, I had celery sticks with buffalo hummus.  I took a couple tablespoons of the copious amount of hummus we have and mixed in a little smoked paprika and Louisiana hot sauce – delicious!

So I’ve never made a cheesecake before.  For some reason I had it in my head that it was going to be too hard or complicated or something.  I’ve had this recipe for Tropical Mango Cheesecake that I tore out of a local magazine for like 2 years.  I finally decided now was the time to make it.

I didn’t have a spring form pan, so I picked one up today! Bonus!

I figured now was a good time to try this special treat since tomorrow is Noah B’s and my anniversary – 5 years!  It certainly has been a fun 5 years so far! 🙂

The crust after it’s baked – it’s just coconut, lime zest, a little sugar, and butter.

I’ll let you know how it turns out…and most definitely share the recipe if it’s good!

Tomorrow’s Friday! I’m so ready for a fun-filled weekend ahead – anniversary celebration tomorrow night, packet pick-up and hangin’ with my mom on Saturday, then the half marathon in Toledo on Sunday along with some birthday celebration with my family!
